Dr. Alberta Onyuna is a lecturer of Hospitality Management at Moi University, Kenya. She holds a Bachelor’s, Master’s and Ph.D. Degrees in Hospitality Management from Moi University. She is the chair of postgraduate studies at the department of Hotel and Hospitality Management. She has been in charge of ISO 900I:2008 and ISO 9001:2015 Quality Management at the Department of Hotel and Hospitality Management for over ten years, responsible for ensuring Quality Management System processes are implemented and maintained. She has over 15 years of experience instructing university students while simultaneously leading administrative and research activities. Her teaching areas include; Curriculum Theory and Design, Risk and Crisis Management in Tourism and Hospitality, Food Safety, Hygiene and Sanitation, Food and Beverage Production and Service. Her research interests include: Food Safety, Experiential Learning and Skills Development, Hospitality Competencies and related issues. She is a member of Tourism Professionals Association and Association of Hospitality Professionals and Practitioners in Africa. Alberta is also a Food Safety and Hygiene expert. Her avid campaigning for an overhaul in mentality, practices and habits of food handlers has catapulted safe food and its benefits into the mainstream and has earned her recognition from her superiors and peers. Areas of Expertise include; Food safety and hygiene; Food microbiology, HACCP, food borne illnesses and prevention.
